So if no one is mining the coin.....How are transactions on the network being paid to verify the ledger?

If no one is being paid to mine, how is the ledger being updated when people buy this ICO coin?

If this coin takes off in the next 48 hours, is there anyway to ramp up how much network traffic or number of transaction its capable of handling?
