Noob question where can I set my timezone so I can match with my local timezone for payouts

you cant. Payouts occur once a day usually around same time.
Sometimes it doesnt execute payout, but it usually sorts itself on second day, if not check the forum, or make a ticket.

everything with a date-stamp is shown in your current timezone already, block times, last share processed, etc. you cannot change the time of backend server processes. the server is configured to operate based on EST timezone.
